Instead it shows every single film (collection-tagged or not) just as in the “Library” tab… and I can sort them there as well. On every other device Im still able to see…

Desktop version does not show Collections anymore

Try Settings > [Plex Web | Plex for Windows | Plex for Mac] > Debug > Restore Defaults.
This will reset the customizations of the client – not your server and IIRC should also fix the broken collection tab.
