I used to have background images show up in the background on the following page.
However it seems now they show up in a header that I have to expand, that I feel just wastes space. Is there a way to have it put the image in the background again?

Yes the background image display is different.
Click on the top right little image square icon.
The background image will display but not as a background image more like a large poster.
I wish there was a way to revert this, because the new replacement just seems to waste space.
It’s been ‘Improved’. Like it? Plex does.
If not - too bad - Deal with it.
For anyone else that doesn’t like this change I wrote up a userscript that moves the the artwork to the background.

While many will understand how to use this many won’t. Might help if you give brief directions how to install it.
Also do you know what browsers you have tested it to work with?

Userscripts (a.k.a User Scripts, User scripts, or .user.js) are open-source licensed add-ons for web browsers that change web pages as they are loaded. They give users the power to make websites do what they want them to, rather than what was originally intended. This kind of script is usually file named on your computer as site it affects - what useful name you want to call it.user.js and always does end in .user.js.
I have only tested this in chrome, although the css and javascript that went into this is pretty basic so it should work on any browser.
I made an update to this for the current version of Plex since it appears the class names they use change slightly from version to version. I also fixed an issue where the first time you would go into a show it would show a blank background.
