I have the Theatrical version of Blade Runner and the Final Cut. They are both in separate folders and each with their own set of Extras. (I have a number of movies like this)
Plex will only see one set of extras. It will either have the Theatrical extras for both the Theatrical version and the Final Cut or if I Refresh Metadata it will have the Final Cut extras for the Theatrical version and the Final Cut.
It would be good if Plex could see both sets of extras separately.

Are the two edition in separated folders or do they share a folder?
Did you create a common folder for the movie title, and then separate sub-folders for the editions?
Please show a directory listing, so we can understand and recreate the issue better.
I just remembered something that I think is linked to this problem. I recently watched the Directors Cut of Cinema Paradiso over several nights. When I went back to watch it, in the Continue Watching section, it had both versions of Cinema Paradiso when I had only been watching the Directors Cut. I have recreated this in the screenshoot.
Somewhere in the Plex code it sees two different versions of a movie as the same movie.
That is a different issue than the extras but maybe relate to cause. Is that doing the same for Bladerunner? it would suggest Cinema Paradiso ones you have are just split apart and renamed without an edition title
Does one of them have the edition info? it will be right after the GUID in the plex media info xml if it s there. it will probably shed light by looking at that for them
