I would like to put my documentaries into their own folder. However, some are TV Shows and others are Movies. When I create a folder as a TV Show only those type of documentaries will show up and vice Vera’s for Movies. Is there a way to combine these into one folder?

Not at this time. There really isn’t a complete answer for this type of thing, other than making a “Other Videos” library and then you have to juggle agents to get things working right. This solution is going to take a bit of manually matching things to make them all fit together right. If you have a moderately sized library of documentaries, it could take you a while to make it look right.
There have been a number of Feature Requests for this, but only one of them seems to have gained much traction: https://forums.plex.tv/discussion/152418/popular-collection-overhaul-ideas#latest While the idea is aimed for collections, the OP also talks about TV shows and Movies in the same collection, which would fit into your idea nicely I think.
To add your support for this, you add a “Like” to the first post of the thread. Don’t +1 or anything else, as those aren’t counted. Just the “Likes”.
And then it’s a waiting game. That particular request is at least 15 months old, so this should give you an idea of how long it might be before it’s implemented. (Although there is another Collections request that is older, the intent with that one is movie collections, not incorporating TV shows and Movies together.) There are many requests now that are going on their 4th year, if this is any indication…
