unfortunately Plex is not really designed for cataloging DVD sets because of where metadata comes from
The TVDB catalogues things as they actually aired on TV not a DVD set That particular episode is on the TVDB and would be named like for a tv library in the show “National Geographic Documentaries”

So you have three choices
- find every one the proper episode numbers for each on TVDB and rename according to that and put them in your TVlibrary as the show “National Geographic Documentaries”
- Name each whatever the episodes name it treat it like the movie name then put them in a movie library. since those are likely the movie titles if they all are in IMDB or themoviedb
- Make your own show and name it whatever you feel it should be with episodes S01E001 through S01E100 but then if metadata not embedded in file already you would have to manually enter it for each file in Plex
