Will Plex change any of the metadata embedded on my local files?

No. Plex has had a long-standing policy of never touching your media files. Whatever changes you make to metadata in Plex is stored in Plex’s database.
The only exception is if you enable the option to allow the user to delete media, and the DVR feature can be set to delete old recordings (or something like that - I’ve never used DVR).
Which is not ideal I think. I would love to have Plex star ratings for my music reflected in the files metadata.

plex barely reads tags correctly.
no it doesn’t update/write tags or other metadata to files.
