Plex currently has no concept of external audio tracks. Your best way forward is to use an app like MKVTOOLNIX to mux the audio track into your file.

There’s a feature suggestion for Plex to allow recognition of external audio tracks, same as it does for subtitles.

Alternate [external] Audio Tracks

Directors Commentary, Dubs, etc.I'd love the ability to load external audio tracks for directors commentaries, things like MST3K-style alternate audios, dubs, etc. Sometimes these are in MKV, but sometimes you find them as separate files. Would love to be able to play simultaneously!
