I’ve had this problem for the past month on and off. The only channel I am having this happen with Animal Planet HD for verizon fios. I have reported it via the spreadsheet in the sticky above for EPG repeatedly . Is this ever going to get resolved? I have no other problems with any other channel? I look forward to hearing from you.

You can always use the Minutes Before Start option for the show to start 1 minute early. This is what a lot of users do to ensure they do not miss the start of the show. Plex starts the process to record a show at the start time for the show.
I get 15 seconds of the show before, that is the problem.
Then it sounds like Animal Planet is starting shows late.
If that is the case, how can the guide be synced with them?
If they report the show is starting at 8:00 and don’t start it until 8:00:15 there is not much Plex can do about it. You will get whatever they are broadcasting from 8:00:00 until 8:00:15. Plex just requests a stream on the channel from your tuner device at 8:00 and records whatever the channel is broadcasting until the end time for the show reported in the EPG.
That’s what pre and post padding is for. I use 2 minutes for EVERYTHING unless it’s a sport show that could run over then the post padding is much longer. (and adjust shows that come on AFTER sporting events).
