I’ve been trying to search around here for an answer but haven’t found one yet. Sorry if this is a dupe post as well.
Is there a way to encrypt stream data as it leaves my server? Or maybe a 3rd party option besides a VPN.

It already leaves your PMS secure…
See: https://support.plex.tv/hc/en-us/articles/206225077-How-to-Use-Secure-Server-Connections
Now, does this only provide a SSL encryption or can the data be sniffed and content being streamed be read or logs of this kept anywhere?
@cyris69, TLS Certificate that Plex and DigiCert grant to your every accessible Plex Media Server installation means that your connection from client to server is encrypted and cannot be sniffed by 3rd party. As long as you have a direct connection with your PMS, no logs are being kept on Plex’s side, only on your machine running PMS. If your PMS isn’t accessible from the Internet and you use Relay functionality, though, I suspect some logs may be generated.
The like I provided goes into great detail as to what is provided.
Additionally this link does a nice job describing what it’s about.
