As the titles says I’d love the ability to create my own channel and most importantly share these with people who have access to me library.
Emby now has this feature built in !!
Please please can someone look into this as it’ll be a game changer !!
There’s an existing feature suggestion for this feature. You might want to vote there.
There is a way of getting this done with Plex currently, but it requires a third-party project. This blog (and its associated video) describe one method of doing it.

Ah, thanks for the reminder. I forgot that live TV can only be shared with members of your Plex home.
