A simple request that would make the experience using Live TV (especially in Australia) much better would be to simply display the TV channel logo as the thumbnail when no thumbnail image is available from GraceNote or any other EPG provider. Personally I would not mind if the only thing you show is the channel logo, since I can read what the program name is below it. Maybe have a setting inside the Plex Media Server where you can select to use the TV channel logo when “no thumbnail provided by the EPG” or “all the time” or “never” (which is what happens now). I would be more than happy to BETA test this should enough people want this feature.
One extra option, if the Plex dev team is willing to take the extra step, is to not only include the TV channel logo but also convert the show title (or part of it) into the thumbnail in LARGE print. This could be handy since when using the Plex Client on the Apple TV 4K (for example) the show title is not that big (for those people with bad eyesight).
