Sorry, this is the log level for the web app, which is not relevant.
The setting I mean is under Settings - Server - General - (Show Advanced)
and consists of 2 checkboxes.
One is for enabling ‘debug logging’ (Yes)
and the second is for enabling ‘verbose logging’ (No)

Restart Plex after changing this.

Here is a test:
can you take this whole movie folder with all its files and copy it to a local disk on the Plex server machine?
Then crreate a new movie library and point it to the copied movie.
Do the local extras have subtitles this time?

Yes, it does! And all the thumbnails are generated.

Could you now create a separate share on your NAS
copy again the whole movie folder into it
But this time remove almost all the extras and leave only a few. take the extras out of their subfolders and edit their file names instead, attach the extra type to their file names
so \Featurettes\Big-Atures.mkv now becomes
\Big-Atures-featurette.mkv
remove all other extras and all empty Extras folders too
Update the library.

That doesn’t work. But if I create a new library with the mapped drive (as V:) instead of UNC path all work.
Why do movies work with UNC and extras don’t? Is it a different process for extras? Maybe that one doesn’t have permissions?

I suspect this might be a regression.
I’ll report this to the developers.
