I can see those files in the app.
I have another copy of the movie, less quality, but with a commentary audio track. That’s the reason of the name of video and subtitles files.

Commentary-featurette.en.srt
Commentary-featurette.es.commentary1.srt
Commentary-featurette.es.srt
I cannot see the subtitles. I thought in the new versions of Plex I could use subtitles for the extras just as I can use them for the main file, without needing to remux files. Am I wrong?

What exactly are you trying to achieve here?
If the files are the same length, you could simply remux the commentary track (and related subtitles) into the original movie file.
As for the naming in your example.
You’re currently storing the video with the audio commentary as a local extra of the main movie.
The subtitles should always end with the section specifying the language code (and type). Plex however doesn’t have a concept of providing a descriptive title for the external subtitle.

I haven’t tested this myself. From what I understand, this should be working.
However from what I remember, you can only have a single subtitle per language code. The subtitle file‘s base name must match that of the video.
In your example, the .commentary shouldn’t be recognized.
If recognized, the subtitle of an extra won’t show in the UI. The available subtitles should show during playback in the playback controls.
The benefit of muxing the additional subtitles into the file is that you can title the embedded track (though not all apps will display the title alongside the language).
If you only keep the second file for the commentary… why keep the entire file instead of placing it in the main file?
NO, external subtitles don’t work on local extras.
You need to mux them in.
It’s easy. Download MKVtoolnixGUI and drag both the video and the subtitle in.
