Looking up tv shows on the IMDb won’t help much.
Plex is fetching data for tv shows from TheTVDB.
So:

look up your show over there:
https://www.thetvdb.com/series/342515
Use the spelling they use over there.
It appears you have only one episode out of 3. -
Stick to the Plex naming guidelines for tv shows

If you want to make extra-sure, add the (year) to the show folder name.
TV Shows/Impossible Builds (2018)/Season 01/Impossible Builds - s01e02 - Europe In The Desert.mkv -
if these are mp4 / m4v files, you better do the following before adding the show into your Plex library:
Go to
- Settings - Server - Agents - Shows - TheTVDB
In there, grab the line ‘Local Media Assets’ with your mouse and drag it downwards, so it ends up being at the bottom of the stack of active agents.
Repeat the same under - Settings - Server - Agents - Shows - TheMovieDatabase
- Settings - Server - Agents - Movies - Plex Movie
- Settings - Server - Agents - Movies - TheMovieDatabase
- After adapting all those settings and the file names and folder organisation, perform the Plex Dance
