So I’ve logged into my account on someones iPhone and now I wish to disconnect it from my server. Simple enough, except for whatever reason, I assume I’m doing it wrong, their device isn’t under the ‘devices’ tab at all? The only devices that are on there are windows logins, no phone logins at all, and I can even see that they are watching something currently, casting to a Chromecast.

Where are you checking this? in PlexPy?
If so, confirm this with ‘Now Playing’ in the web app.
There are no iPhones connected to your user account.
When did you do this?
Are you sure you didn’t share your server with his own Plex user account?
Yes I’m viewing it through the webapp on my server end, there is currently something playing through it says Chromecast with the user that is logged in using an iphone. Under the devices tab there are only windows logins from my computers, and a few android logins that are my personal ones.
It was logged in several months ago.
They are using a managed user account, the issue being that if I just remove the managed user they can just select a different managed user to sign in as as they are logged in as me on their end.
You could try to temporarily put PINs on all your managed user accounts.
Then shut down your server
and change the password on your own plex account. While doing so, you must unfortunately tick the checkbox to sign out all connected devices:
Afterwards, wait a few minutes and then start up your server again.
Will this also disconnect any device that was connected using only a PIN?
