Help please: Album Artwork disappeared / not showing

Hi All,
I know this topic has been done to death but there’s still an issue and all my reading on this forum and reddit still has not resolved this one. Apologies in advance for the rant.

tl;dr
I’d simply like to know how to show my album artwork. Plex will not show it for my audiobooks.

Long version
Plex WAS showing all my audiobook artwork this morning. I had to move some files around on my SSD and lost some content (some audiobooks) I chose to restore my audiobooks library from TimeMachine backup. (please note these are now the identical files that were there this morning when Plex WAS showing all artwork)

Once restored to EXACTYLY how it was early today Plex now does not see the artwork for 80% of the 500+ audiobooks.

All my audiobooks do have artwork - evidence = it shows (still shows) in these apps, Finder, iTunes (yes iTunes), Music BrainzPicard, Music Tag Editor, Meta etc and Plex earlier this morning!

No I can’t manually add artwork using the Plex edit > poster option (there are too many to do AND if there is an error with my library I will have to do all the work again later. For that reason I have always edited and had correct all meta data, names, folder structure and album artwork at the source.
I have tried the options to allow Plex to use Last.fm etc to get content / metadata/ artwork but have found this to be very incorrect too often - eg, some Audiobooks have a picture of the artist not the book cover! What?! Why?

I have tried;

  1. scanning library files
  2. refreshing metadata
  3. Analyze
  4. toggling on / off / on Album artwork in advanced settings (3 dots > Manage Library > Edit > Advanced > Album Artwork (various settings)
  5. Creating a new library from the same SDD folder for my audiobooks - Now Plex shows 507 audiobooks instead of 503 and there is NO artwork at all.

Further questions, unnecessary for answer, but I would love to hear your 2 cents:
Why o Why can’t Plex get this right? When I first started with Plex, this was the first issue I ran into, Over the years I have read every forum topic raised on this and the problem seems to be still there in all the years I have been using Plex.
What am I doing wrong in set up?
Why does Plex show 503 audiobooks from my SSD Audiobooks folder then 507 if I scan and create a new library a few minutes later with all the SAME settings and same location??
