[HELP] Plex won't display the titles I've entered for my own media

I’ve got an “Exercise” category. I’ve used the “shows” setting so I can group certain DVDs together. For example, one “show” might be a certain workout. The files are labeled like this: workout - s01e01 - core workout. Each “show” is in its own folder.

I’d like that to appear in the library under the show “workout” as “core workout.” It’s currently listed as “episode 1.” If I refresh the metadata, it changes all the filenames to the day they were uploaded onto my drive.
