After raading thru the thread again I think I found your problem. You mix host directories and docker mappings.
E.g.: /Videos is part of a host directory. user/Videos is a host directory. /movies is a docker mapping. Within Plex settings you can only refer to docker mappings. And doublecheck upper-/lowercase.

Here are mine (from the Linuxserver Plex docker configuration in Unraid):
#Name - Host Directory - Docker Mapping
Appdata
Appdata - /mnt/cache/system/appdata/plex - /config
Plex backups its database here (set withing Plex settings)
Backup - /mnt/user/Backup/plex - /backup
Temp directory for transcodes - use only with lots of memory (set within Plex settings)
Transcode - /tmp - /transcode
Libraries
Movies - /mnt/user/movies - /movies
Music - /mnt/user/music - /music
TV - /mnt/user/tv - /tv
…
In your case Pre-Roll (what I would do)
PreRoll - /mnt/user/PreRoll - /preroll
In the Plex settings only the last part - the docker mappings - are useable. E.g. /backup, /transcode, /config, /music, /movies, /preroll, /tv.
The second part - the host directories - must exist on your Unraid system (User Shares or Disk Shares). E.g. /tmp, /mnt/user/Movies, …
