I have just downloaded plex and added a movie and a tv show library.
Is there a way to have an addition menu items like stand up comedy, cowboy films etc.
if so how do I go about this.

You can add more libraries to your liking.
Personally I wouldn’t create libraries for every genre… there’s options within a library to filter/group media to address this.

With a Plex Pass, you will get a “Categories” tab in your library, which is fed by the Genres you put on your videos.
You can also create collections and publish them on the Home page. https://support.plex.tv/articles/publishing-collections/
But I wouldn’t overindulge with their number.
