I have downloaded the .deb file and tried opening it with Plex - but it does not update and I cannot find out how to do it via google, searching support articles.
So hope someone can point me to or make a step by step guide

Sounds like you might have gotten the wrong download. The deb files are Linux based install packages (e.g. for Ubuntu/Debian and their derivates). Make sure you download the Windows installer for your OS.

Just had to do it from directly from the NAS instead of the windows application
