You cannot make changes to .SRT files since they are simple text files. The “ASS” (not joking) is supported by PLEX and has some configuration settings. Subtitle Workshop can convert and format sub-titles. Subtitle Workshop 6.3.4 Download Free - VideoHelp
You’ll have to save them in a supported format and not SRT
Supported Subtitle Formats
The following formats are fully supported either as embedded tracks or external subtitle files. Full support means they are compatible with all Plex Apps, including clients that require transcoded media.
SRT ( .srt )
SMI ( .smi )
SSA (or ASS) ( .ssa or .ass )
WebVTT ( .vtt )
Other formats such as VOBSUB, PGS, etc. may work on some Plex apps but not all. For the majority of apps, both VOBSUB and PGS subtitles will require the video to be transcoded to “burn in” the subtitles for streaming.
You have to edit the file once it is in ASS format. I’m not an expert here but the links in the subtitle Workshop explain the re-coding. Kind of technical but it is free. Simpler editors can be free and upgraded to paid to get more options like https://www.kapwing.com/
