I recently paid attention to when I empty the trash, it deletes some of my TV shows
Is there away to stop it from doing that ?
using a windows plex version ?

If you’re not wanting the server to remove shows it no longer has access to the only solution is to not empty trash.
Once the server detects that episodes or a series is missing (or that it can no longer access them) they get marked as unavailable. Emptying the trash is what removes everything marked as unavailable.
