How do I change the Subtitles from None to English?

To change the subtitles during playback, if you pause you should get a menu where you can change different settings and one of those will allow you to change the subtitles.

Thanks, will this apply to hardcoded subtitles?
When you say hardcoded are you referring to subtitles that already included in the media files vs external (srt) subtitle files? Just want clarification because hardcoded normally refers to the subtitles not being able to be turned off, they are permanently burned into the video file. That said, if you are referring to what I first said then yes, it does apply.
An easy way to see what subtitles are available for Plex to use is to use the web portal for your server. If you go into your library from there and go into a movie/tv show (specifically an episode), you will see a dropdown box next subtitles, as well as the text being orange instead of white. See the attached picture for an example.
