How to downgrade from a Beta release on macOS?

Server Version#:Plex v1.38.0
Player Version#:Plex Media Server v1.25.0.5282

Just installed the beta version and getting a warning that my cpu doesn’t have enough power to play a file - wasn’t an issue before.
So, naturally I want to go back to the release version. Looking in the Updates folder in Application Support I see a bunch of files. I presumed that since these are saved on my system I could use these to revert my installation but can’t find information in these forums on how to accomplish that.

The other option is just downloading from the website. However, why are are saving previous versions in the Updates folder if that is our only option?

PS. the Updates folder is nearly 1GB now.
