I’ve been playing around with the opensubtitles .org option in Settings > Server > Agents. But nothing I try works. Has anyone here figured out how to set plex to grab subtitles for your media?

You do need a free opensubtitles.org account. Also, perform a “Refresh All Metadata” on all applicable libraries. It does take time to download subtitles for each movie. Look for the “Finished processing …” message.
For me, subtitles download for H264 movies in MKV & MP4 containers. They do not download for MPEG2 movies in MKV containers (i.e. a DVD rip w/ MakeMKV). Not sure if this is a bug, by design, or system limitation (or user error…). Haven’t tried TV shows or H265 movies.
