How do I block updates to PLEX in the Windows 10 environment?

I’m partial to the legacy interface of Plex-Web and want to avoid UNO…at any cost.

Server Version#: 1.16.4.1469
Player Version#: 3.104.2
Platform: Windows 10

In Settings / Server Name / General:

I also just found and disabled the PLEX update service in Windows 10.
