Plex will handle this automatically. AFAIK after maximum 30 minutes it will have reacted to the IP change.
Since this involves sometimes a change in the DNS system, it is crucial to use a DNS server that is updated swiftly and doesn’t use artificially extended update cycles.
Recommendation: use Google’s (8.8.8.8)
That applies to all networks with Plex clients and not only the server.
