I have a couple of movies that part 1 and part 2. I would like them to be two separate movies but plex combine them into one giant movie. Furthermore, there’s no split option available when you click on the 3 vertical dots. What to do?

File Names Please - Exactly - like a screenshot:
… and in the interest of time - you can fiddle with a couple of different, but similar enough names for Plex to Merge, and you can Split or Merge if Plex isn’t:
If they are merged you’ll see the blue 2 and they can be split here:
If they’re not merged and you want them to be find both of them on one page of Plexweb, select them (little circle upper left), hit the pencil and merge.
If your file names are correct and you have a two parter set, you won’t see the blue two, but you really don’t want to do that anyway. You could just join them together and be done with it:

Splitting is only available when it it thinking you have multiple copies of the same movie. that were merged into one listing. Merging is for combining two of the same movie. This is when you will see the blue #2.
Multi part movies will join if the files are the same name except for the part1, pt1, cd1 disk1 https://support.plex.tv/articles/naming-and-organizing-your-movie-media-files/#toc-2
The easiest way for them not to join is to use roman numerals or if they are different years add that in parenthesis
