The latest version of the service came out and it popped up on my phone when I loaded the plex app, I accidentally clicked on skip this update. Now I cant update to the latest version.
How do I undo this on my server so I can update?
Uninstall and reinstall the app. You will get the latest when you install.
Not sure, but couldn’t you just go to https://www.plex.tv/downloads/ and get the server update with a manual download?

You stated ‘app’ not ‘server’. Therefore you uninstall the app and reinstall.
If mean server, download and install manually.
