I’ve searched the forum on how to unlink a cloud service such as OneDrive or iCloud and found a references on how to do it, but I don’t see that option on my plex media server. Some of the posts were not recent so I’m wondering if something changed. Can anyone tell me how to unlink or remove cloud from my account?

Plex doesn’t manage any links to cloud services (anymore).
This is strictly done via the operating system, on which plex server is running.

plex used to have a hosted pms which you could link to other cloud ‘drives’ like google/amazon/dropbox/etc however that feature was removed a few years ago and there is no settings any more to link/unlink those drives.
as far as general unlinking from windows, generally you would go to your cloud provide account and remove the authorized computers from your account to ‘unlink’ them.
if you have a cloud drive ‘app’ installed on your PC or mobile device, you may want to manually sign out of that too, so it does not log back in.
Plex is not doing any links to cloud services. Therefore it is only logical that you cannot find any menu items related to cloud services in Plex.
Cloud services and the associated software manifest themselves in Windows usually with a dedicated task tray icon.
Look at the bottom, at the right hand end, left from the clock. There are usually several icons. If you can’t find any among these which are related to cloud services, you might have to expand the view using the “upward” chevron ⋀

Okay, it sounds like this is an ‘all or nothing’ situation. If I unlink/sign out or deauthorize my cloud account, I can’t use cloud storage for any of my other files. I really just wanted to have my videos in cloud storage not be associated with Plex. I would like to use cloud storage for other files. I tried to exclude certain file types, but that does not seem to work. So, I believe my only option is to delete videos from cloud storage.

Which files Plex includes into its libraries is totally dependent on how you have set up your libraries. Each library has an ‘Add Folders’ tab, where you can define which locations Plex shall scan for media files. You just make sure that there is not a folder among there which is connected to cloud storage.
Good to know. I looked at my Movie library and all is shows is my C:\user\myusername. I do not have any cloud storage defined. I see that I can add OneDrive or iCloud, but I don’t have them defined.
So why do you want to unlink it, if it’s not linked in the first place? 
Because I’m seeing videos under the Movie library that are in cloud storage. I can click on one and do ‘get info’ and I see it is showing the video in the cloud. In fact I have 3 versions of the same video under movies. One is from OneDrive, one is from iCloud and another is from my C drive.
Then you should change the folder, if it is indeed just pointing to C:\user\myusername. Because it will scan every folder that lies within C:\user\myusername, which might include your cloud folders.
I recommend you to create a folder structure for your media files from scratch, which lies completely outside the pre-defined folders in Windows.
e.g.
C:\
Media\
Movies\
...
Music\
...
TV Shows\
...

yup, that sounds like what is happening, is your cloud drives are syncing your user folder, so anything stored in your user folder (ie your media) will get sync’d to your cloud drives.
this has ZERO to do with plex.
Moving your media out of your user folder is the right solution.
