I’m running Plex Media Server on Mac OS 10.14.5 and out of the blue when I powered up this morning the Plex icon in both the dock and the launchpad had changed to a Mac OS default icon. Any suggestions why this has happened and how to fix it?
That sounds like more of an OS issue than a Plex issue.
I would try booting into safe mode, login to your account, then reboot normally, that may clear the caches.
