In-Car, Offline slinging options

I have a mini van with a factory entertainment system–complete with an HDMI input. I love the Plex sync option on my iphone and ipad, so i plan to load up on content for my kids before long roadtrips.

Unfortunately, the HDMI input is in the BACK of the van, and i want to control the media from the front–a simple cable from my device to the input wont work.

My first idea was to use a chromecast–but i learned that the chromecast requires an internet connection.

My new plan is to leave a raspberry pi always connected to the HDMI input and wirelessly sling content via an adhoc (no internet) network. Ive worked out the hardware setup (using a mausberry circuits car power adapter), but im struggling to find software that will do what i need.

Can i install rasplex on the pi and stream local, synced content from my ios device to it via the adhoc network?

What about rasbmc? Can the plex ios app fling content to a raspbmc?

The ios app can fling to rasplex but idk about raspbmc. However, it wont work with an iphone unless you have tethering, so you might want to use an ipod touch or ipad for this instead.
