I may be a bit slow, but does this include PMS as an integrated thing? I tried copying some media into the video share but it doesn’t get discovered. Looking around I haven’t seen any plex server running. Should it be? Is it something I have to add or activate? Or does this only work with a plex login or a local plex server somewhere else on the network?
PMS, the Plex Media Server, is not included in OpenPHT, which is awesome media player 
Is there any way to get it on there so it’s a completely integrated solution?

Plex was originally a Server-Client adaptation of Kodi (XMBC). If you’re looking for just a nice player of local media, you’d want a version of Kodi for whatever device you’re using.
If you want a server that can stream content to networked devices (local and remote) you want Plex. If you’re talking about running a Plex server on the same box as the Plex client, this is possible if you’re using the main PC OS versions like OSX/Windows/Linux. There are Plex Media Server versions available for those OSes so they can coexist.
