They’ve already fixed it in the beta 7.22 (see here No audio from Apple TV 4K and iPhone 12 PM (tvOS/iOS 15 beta) - #97 by lyskamm)
I’m sure they’ll release it soon and befure the public release of iOS/TvOS 15.
