Since the recent updates to the iOS app I can no longer use AirPlay unless I start AirPlay on another app and go back to Plex and play the show I want to watch. I have looked everywhere I can think of to find how to launch AirPlay within the Plex app like I used to, but I just can’t find it anywhere. Are other people having the same issue?

They took it away. They are forcing iOS users to use the iOS control panel to cast versus in app, which was working perfectly fine for years. Not sure why devs need to fiddle fk with features that are a staple. The new method sucks but they don’t care.
I cannot get iPad, MacBook Pro or iPhone to Airplay in fullscreen. it leaves a border on all sides now when using control center screen share. Did anyone find a workaround?
There is a security vulnerability inherent to Airplay that was recently discovered in all Apple operating systems: iOS, PadOS, macOS, TVOS, Watch, etc.
