I paid for a Plex lifetime subscription, back when Plex was begging for members and I was happy to pay.
Plex is serving my users Movies and TV that aren’t on my server and things that I don’t want to serve my users.
Is there a way to turn this off?

You can them off for YOU and any managed users @ https://app.plex.tv/desktop#!/settings/online-media-sources
You cannot turn them off for anyone who has their own plex account, they must disable them themselves at the same link above.

So I can turn them off for myself, OR I can turn them off for all my managed users, but not both? So Basically do I have to choose between my users suffering or myself?

I’m sorry, maybe you didn’t understand my question.
If I click “Disabled” - Does that disable it for me personally?
If I click “Disabled for Managed Users” - Does that disable it for everyone, including myself?
Disabled turns it off for you AND managed users. Disabled for Managed Users disables it for managed users but not you.
