I have a several folders with a few german and many english tv-series. Is it somehow possible to split series with the german soundtrack to a separate library?
Not automatically.
If you really wanted separate libraries, you’d have to separate your series first into different folders on your disk.
Then create 2 different tv show libraries in Plex and point one to the ‘english’ and the other to the ‘german’ folder.
That’s way to complicated since I would have to check every single check every file and move them from disk to disk.

You might wanna take a look at Plex2CSV.
It will at least give you a nice list to browse and filter/sort.
