I’m running version 1.27.0.5897 on Windows 10 Home and when I try to install 1.27.1.5916 it won’t work. I download the latest version, click install now, then it says that it’s installing it, I wait, but after that it keeps showing the same server update is still available, i.e. it hasn’t been installed. I’ve also noticed that in settings under General, it shows that “Server settings are unavailable”. I hope things didn’t get corrupted while trying to update to this version!!

I had no issues installing 5916 (Win 10).
I always do a reboot after an install as well.
Many versions back I did have to do an uninstall and reinstall.
You mean uninstall an update or uninstall Plex entirely? I would hate to do the latter, as I would lose all my playlists and media meta data.
Actually you wont, that data sits in your appdata, and by default when you uninstall it leaves those settings behind just like the registry keys that contain your plex configuration.
From that install log things look like it installed, can you post your server logs?
