The latest update from Microsoft for Win 10 appears to be a disaster! PMS runs for awhile and then crashes. It also caused my Intel Ethernet adapter to stop working.
I would avoid it for now.
Same thing - Here is what I have done:
I uninstalled PMS - (Your libraries will stay intact so do not be nervous)
Then I went to - Plex Media Server Old Versions Downloads - VideoHelp and installed an April Version. Any will work fine.
Now I just check the forums now and again to see if PLEX has caught up to the issue. - They have not… Good luck 
Well I just rolled back from 2004 to 1909. Everything is normal again.
Rock on… i would hold off updating until they fix the screw up.
