As per the title recently my plex has been transcoding content over the LAN from 720p into SD content.

What’s your video quality settings in the Plex Media Player?

Video Quality: Maximum

Remote Stream: 8Mpbs (1080p)

You probably need to look at the logs to identify what’s causing this particular transcode.
