I had a bad experience a few years back with an upgrade to my media server so for quite a while I have been under the “if it isn’t broke don’t fix it” attitude even though I know for software patches etc this is not really the case. In short I decided to upgrade today since I have time to work on it if any issues but when I went to upgrade from within my server the option is greyed out. I’m currently on version 1.32.7.7621 on my Mac Mini and wanted to upgrade to the latest. I’m always afraid of screwing this up and not sure what I can do to upgrade. Could I simply just close the server app and download the latest and install over the old? I am on Mac OS 10.15.7 and the latest says it just needs OS 10.13 or above so it seems to be good. Any help is greatly appreciated!
Mac Server OS: 10.15.7
Server Version#: 1.32.7.7621
Player Version#: 10.16.0.758

You want to keep this in mind from the Announcements section:
Plex Media Server 1.40.2.8395 is now available to Plex Pass users in the Beta update channel.
NEW:
(PLEASE NOTE) Please also be patient when updating to this version if you have a very large database and allow the upgrade process to finish.
I did this a while back and remember my PMS just sitting there. Looked at the Activity Monitor to watch progress. Plex will not show you progress of this update. You will think it has hung. Be patient. Otherwise the update went well for me. I’m running on macOS 10.13
Yes.
As CWallace pointed out, it might take a moment for the server to be available after updating to the 1.40 releases (depending on the size of your libraries). During that time http://127.0.0.1:32400/web will show you a maintenance message.
