So not sure what, when, or why it happened, but sometime in the past 24hrs all of my managed users have been deleted.
Has anyone else experienced this?
Did you accept the invitation to another user’s Plex Home?
Oh wow. I did today by a mistake on their end.
That is the reason. You are warned if you are about to enter someone else’s home. It says your own home is destroyed if you do so.

There is unfortunately no way to restore your home, not even by reverting to an earlier version of your Plex database.
Well I’m no longer apart of said Home Network, so it just sounds like I need to remake them.
You can restore them with a bit of work. I gave @Blacktwin these instructions when it happened to him.
