Is there a maximum resolution for album artwork or movie posters? What is the recommended resolution? (The closest I have seen is a mention of 2000x3000 for movie posters).
I’m not aware of a specific maximum size.
Posters should be in 2:3 ratio (e.g. 2000x3000, 400x600 pixels).
I’m not 100% sure but from what I’ve seen Plex creates an optimized version of your poster if it should indeed be too large to load efficiently. Personally I go with the best poster quality available via iTunes 
That is what I have been doing, but wasn’t sure if I should really seek out that 2000x3000 when iTunes only has 1400x2100 or so on. Same goes for music, as I am not sure if I should really spend the time finding 3000x3000 when not easily available. (That also will impact the specs I will scan my covers for CDs that are not available online.)

Ben has in the meantime added a version for Apple’s TV app that’ll also show collections or logos.

Oh I have been using that for a long time. I also discovered that MoviesAnywhere sometimes has larger posters and separate ones for different versions. (If you go to the movie’s MovieAnywhere page and view the poster image and remove the resize at the end of the URL).
