Mini Plex server for specific "mobile" application

My wife and I are planning within the next year to become full time or near full time RVers. This will be a major change in life style, especially when it comes to IT. The areas we are planning to go to have little quality broad band and internet access. Over the years I have built quite a library of media that currently I share to all my devices via Plex.

With this planned change I want to take my video and audio files with me with a plan to shear it out locally only. That is I am only planning to stream out to TVs in the RV (via CAT6) and possibly stream to devices like tables or phones within WiFi range.

So here is my question: What is the best solution with the smallest foot print and lowest energy demand? Should I use an external NAS and if so what interim process do I need to make this work? Alternately if I us a hot swap RAID what interim process do you recommend?

I should qualify that in application I do not anticipate more than 2 streaming devices to be used at any one time.

not sure about what you should use but you will need to make sure your client and plex server are capable and setup to work without Internet if you plan to go places that don’t have Internet. ( What i mean is the plex server and many clients want or need Internet access when they start to stream. ) I know this from setting up a plex server at a remote cabin that has no Internet access. you may want to search plex forum related to this (here is one example forums.plex.tv/discussion/217359/plex-server-for-my-cabin"https://forums.plex.tv/discussion/217359/plex-server-for-my-cabin")
