I agree about adding gesture support. VLC Streamer (http://hobbyistsoftw...lcstreamer-more) nails gesture support. They have configurable one and two finger scrubbing, volume, play/pause, and others. You've probably seen it, but check it out if not.
I just setup Plex about a week ago. Although Plex is a much better product overall, coming here from VLC Streamer was a *major* disappointment regarding the in-playback experience. So, I guess only about 99% of the time :) (ok you got me, only when I want to skip forward/back or pause or something - fair enough)
I like JonBule's idea about partitioning the screen. And I really like the idea about being able to use gestures on iOS as a remote.
I would suggest making the gestures configurable and start out with something like the following:

one finger swipe (for each of: left, right, up, down) (consider one for each: left, middle, right third of screen)
two finger swipe (for each of: left, right, up, down) (consider one for each: left, middle, right third of screen)
one finger double tap (one finger single tap should probably stay fixed to HUD)
two finger tap
== Actions ==
brightness up (set to: 1%, 2%, 3%, 5%, 10%)
brightness down (set to: 1%, 2%, 3%, 5%, 10%)
volume up (set to: 1%, 2%, 3%, 5%, 10%)
volume down (set to: 1%, 2%, 3%, 5%, 10%)
skip backward (set to: 5s, 10s, 30s, 1m, 5m, 10m)
skip forward (set to: 5s, 10s, 30s, 1m, 5m, 10m)
play/pause toggle
At a minimum, the one finger variants, volume, skip, and play/pause should be supported. While I'm at it, it would be nice if PHT right/left arrow key could be configured with differenc time intervals - I really dislike the defaults.
