Is it possible to create a movie folder called collections and put create folders with my movie collections inside the folder. ie, A folder for all my James Bond Movies and another folder with my Die Hard Movies ect.

This can be done but Plex won’t understand your logic and will add the movies (like any other movie) to your library. You will still need to go back into Plex and create a “collection” and select these movies as part of it.

  /Die Hard Collection
      Die Hard 1 (Year).ext
      Die Hard 2 (Year).ext
      Die Hard X (Year).ext
      etc..
  /James Bond Collection
      James Bond 1 (Year).ext
      James Bond 2 (Year).ext
      James Bond X (Year).ext
      etc..
  /Star Wars Collection
      Star Wars 1 (Year).ext
      Star Wars 2 (Year).ext
      Star Wars X (Year).ext

If the movies are in a mp4/m4v container, you can embed the collection title into the “Album” meta tag.
Plex will automatically create the collection and add the movies to it which have the same content in the Album meta tag.

I have created three folders, Movies, Movie Collections and Tv Shows.

The Movie folder works fine for my single movies.

My Movie Collections show up as individual movies on my Apple TV not as the show on my pc in seperate folders.

How can I display my movie collection folders on my tv what am I doing wrong.

You cannot. Plex will not automatically create collections from movies, which are stored in a common folder.
You’ll have to recreate the collection yourself https://support.plex.tv/articles/201273953-collections/

I have already created individual folders for, James Bond, StarWars, along with multiple other folders.

Am I able to put all these folders in one folder called Movie Collections.

No, nested collections are not possible.
But there is limited need, because you can already switch most plex apps into a “collection view mode”.

How do I show Collections on my Apple TV using the MrMC app.

You need to ask the developer of MrMC. That is not an offcially supported client.
