Movie formats and transcoding

I have some .MOV files shot on my GH5 camera and would like Plex to be able to play these but when I load them via the Plex iPhone app, I get a thumbnail pretty quickly when browsing the folder but playback never starts, I just get a dimmed image of the first frame of the video and a spinning circle.

These are pretty hefty 4K 10bit .MOV files but Synology moments/photo seems to handle them a bit better than Plex.

I am trying to understand if I can get my DS418 + Plex to transcode these files for easier mobile device playback.

I also seem to have the same issue with the Apple Prores codec.
