When I set up my two libraries (Movies and TV Shows) and pointed Plex to the media folders, Plex put two movies in my TV Shows library. How do I change that so they’re in my Movie library?

Log files and the names of the items you moved will reveal many things.
Plex don’t ‘put two movies in your TV Show Library’ unless there’s something seriously wrong. Log files might reveal that.
Put your movies in one directory and your tv shows in another one. Aim the movie library at the movie directory and the TV library at the tv directory. You can’t get stuff in the wrong library if they are in a different directory.
