I have multiple servers listed and want to remove some from the list. Also, how do I access my server I’m using? the old way is not available
Not sure from what version you’ve upgraded. The current mode is to find the entirety of servers and libraries under the More button in the main navigation. There you can also „pin“ which of those libraries you want to be showing in the Main navigation itself:

You can delete servers from your own account in the list of authorized devices:
https://app.plex.tv/desktop#!/settings/devices/pms
