I just discovered that if you uninstall it from the Fire Stick then just reinstall it the Appstore has the old version as default. You just reinstall it and turn off auto updates !
Indeed that is what worked for me. For other you do have to turn off auto updates quickly as it seams to remember that they have upgraded the device before. It told me there was an upgrade within two minutes of reinstalling it. Note I went into the plex app seconds after reinstalling to see if I was lucky and was granted the older interface.

THE NEW APP IS TRASH. However, I do like the logos that were added. Would be nice if I had more option on using them. Other than that, someone needs to shake their finger at whoever is responsible for this new atrocity. BTW - my Fire-Tv app no longer plays my pre-rolls nor the TV Show them music. Make it make sense!!
Having used the new UI all week, and now back to the previous one, it has totally re-enforced just how bad the new UI is. I am at a loss to explain how anyone at PLEX thinks the new UI navigation is better in ANY way. It’s more convoluted, confusing, clunky and difficult to use.
It is the worst downgrade I have ever used on a piece of hardware.
It’s slower to respond to controller presses, sometimes just ignoring things altogether until you hit the magic button, which is sometimes “up” for no reason.
The search STILL doesn’t have voice support (on a voice-forward device).
Search results show the possibility of multiple servers (SomeServer +, etc.) but just picks whichever server, doesn’t care or ask, no way to switch.
There’s more, but I’m done for now. It makes me want to throw the remote at the TV, and I have one of Amazon’s flagship Omnis, which (and I hate having to say this about a TV) has a decent CPU compared to my other two Fire TVs. It’s even more rage inducing on those two.
